Vegan Vodka Cashew Cream Pasta

Vodka Cashew Cream Pasta recently went viral on TikTok. Here's our vegan version of this popular pasta dish. Perfect for a date night with bae.

prep time: 30-40 mins | cook time: 20-30 mins | 4 servings

☐ 450 g (1 lb) rigatoni (or any dry pasta)
☐ 1 shallot
☐ 2 garlic cloves

☐ 110 g (1/2 cup) tomato paste
☐ 1 tbsp chili paste (or sambal oelek)
☐ 3 tbsp vodka
☐ 250 g (1 cup) cashew cream (or 450g/1lb dry, unsalted cashews)
☐ 2 tbsp vegan butter

cooking instructions

1. Cook pasta in boiling salted water until al dente (follow package instructions).

2. Peel and finely dice the garlic cloves and shallot. Heat olive oil in a saucepan, add garlic and shallots, then cook until softened.

3. Add tomato paste and chili paste (or sambal oelek) and stir in for about 5 min. Then add vodka and cook until evaporated.

4. Reduce heat, add cashew cream*. Stir in until paste turns light orange. Season with salt and pepper.

5. Drain the pasta, add it to the saucepan with the vegan butter. Mix well until pasta is completely covered in sauce.

6. Serve in a bowl, sprinkled with olive oil and vegan parmesan (or any available substitute).

*easy homemade cashew cream
Place dry, unsalted cashews in a bowl, then pour hot boiling water over cashews and soak for 30 min. Drain cashews, add to a blender with a pinch of salt. Now add just enough water to cover the cashews and blend for 3-4 min. Allow to cool off in the fridge for 10 min.
